This 6-Ingredient Simba Soda Bread is such a great flavour hack Makes: 1 loafHands-on time: 15 minutesHands-off time: 1 hour 10 minutesINGREDIENTS1 bag (120g) Simba Cheese & Onion Flavoured Potato Chips OR Simba Creamy Cheddar Potato Chips2 cups cake flour cup brown sugar1 tbsp baking powder1 cups soda water cup melted butterServing suggestion:Chopped chivesButterMETHOD1. Preheat the oven to 180C on fan-assist and grease a 22cmx10cm loaf tin, or similar size.2. Remove 1 cup of Simba Cheese & Onion Flavoured Potato Chips OR Simba Creamy Cheddar Potato Chips and set aside. Using a rolling pin, crush the remaining chips in the chip bag until a fine crumb is achieved.3. Add the crushed chips, flour, sugar and baking powder to a large mixing bowl and whisk until combined. Add the soda water and half of the butter to the dry ingredients and stir until a thick batter has formed.4. Transfer the batter to the prepared loaf tin and smooth the surface to ensure an even rise. Drizzle the remaining melted butter over the batter. Using your hands, lightly crush the reserved cup of chips over the batter and gently press the chips into the top layer of the batter to ensure they stick to the bread. 5. Bake the loaf for 20 minutes, uncovered, before removing the loaf, covering with foil and baking for a further 40 minutes until the bread is cooked through and golden brown. *Chefs Tip: Covering the loaf will ensure the topping does not burn!6. Remove the bread from the oven and transfer to a wire rack to cool slightly.7.
