Aaron's China Guide E09 - Across the bridge rice noodles - 过桥米线 | Aaron Sawich

Noodles again, this time noodles made from rice, not flour. Guo qiao mi xian 过桥米线 means across the bridge rice noodles. These are special food from Yunnan province in Southern China. The ancient story tells of a worker who's wife would bring him noodles every day but the ingredients would be soggy by the time the noodles got to him. The wife had an idea to seperate the ingredients from the soup so that way they wouldn't get soggy by the time they got to him. Yunnan cuisine is excellent and has many different foods for you to try. Guo qiao 过桥 means to cross a bridge, and mi xian 米线 means rice noodles.
