Aaron's China Guide E12 - 回锅肉 - Twice cooked pork | Aaron Sawich

More Sichuan cuisine this week. Hui guo rou 回锅肉 means return to the pot pork or twice cooked pork. Hui guo 回锅 means returned to the pot, and rou 肉 means meat. This dish makes use of something called dou ban jiang or broad bean sauce. This is the preferred seasoning of Sichuan and Chongqing cooking. Makes a great lunch and spicy to boot.
