ABOOD CHICKEN MANDIMETHOD1.First we need to make Mandi spice powder,for this we need to grind few ingredientsCoriander seeds Cumin seeds Cloves Black peppercorns Fennel seeds Cinnamon sticks CardamomBlack cardamomNutmeg small piece2.Grind into fine powder and add it to a bowl,keep 1 teaspoon asideThen to this bowl addSaltPaprika powder / red chili powder Lemon juice Chat masalaGinger powder Olive oil/vegetable oilSaffron water half Mix it wellMandi spice masala is ready3.Now we need a full chicken without or with skin, cut it into four parts, now apply this masala paste to the chicken pieces and marinate for 2 hours4.Wash and soak basmati rice in water for an hour, here I have taken 500 gram basmati rice/3 glasses5.Next we need to make a steamer setup as shown in video, add water to the vessel - 1 and half litre and on it place strainer and on it place marinated chicken and cook under steam till chicken turns tender, save the stock for cooking rice6.Then fry the steamed chicken in 2 tablespoon oil, keep it aside7.Fry few almonds,cashew nuts and raisins in clarified butter8.In a pan heat oil - 2 tablespoonTo it add chopped onions - 1 medium sized and saute, then add diced green chilies - 2 saute itThen add the spice powder, salt and add chicken stew - 61/2 glasses9.When water boils add soaked rice in it and cook till done, then add saffron water in it and place chicken pieces10.Now give the rice and chicken charcoal smoke, Mandi is ready11.Garnish Mandi with fried onions, fried nuts, coriander leaves etc12 .
