Achaari Khichdi is an Indian dish that is made from Short grain rice and lentils. Its like a savoury rice and lentil porridge, and is very popular in India.ACHAARI KHICHDIIngredients2-3 teaspoons pickle paste (achaar)1 cup rice, soaked for 30 minutes and drained½ cup split green gram, soaked for 30 minutes and drained½ cup Bengal gram, soaked for 30 minutes and drained2 green chillies¼ teaspoon turmeric powderSalt to taste1 tablespoon gheeA pinch asafoetida1 teaspoon cumin seeds1 tablespoon chopped fresh coriander leavesMethod1. Combine rice, green gram, Bengal gram, green chillies, turmeric powder and salt in a pressure cooker. Add 3-4 cups water, cover, place on heat and pressure cook till 2 whistles.2. Heat ghee in a non-stick pan. Add asafoetida and cumin seeds and sauté for 30 seconds. Add cooked rice-gram mixture and mix well.3. Add pickle paste and mix well.
