Achaari Khichdi | Sanjeev Kapoor Khazana

Achaari Khichdi is an Indian dish that is made from Short grain rice and lentils. Its like a savoury rice and lentil porridge, and is very popular in India.

ACHAARI KHICHDI

Ingredients

2-3 teaspoons pickle paste (achaar)
1 cup rice, soaked for 30 minutes and drained
½ cup split green gram, soaked for 30 minutes and drained
½ cup Bengal gram, soaked for 30 minutes and drained
2 green chillies
¼ teaspoon turmeric powder
Salt to taste
1 tablespoon ghee
A pinch asafoetida
1 teaspoon cumin seeds
1 tablespoon chopped fresh coriander leaves

Method

1. Combine rice, green gram, Bengal gram, green chillies, turmeric powder and salt in a pressure cooker. Add 3-4 cups water, cover, place on heat and pressure cook till 2 whistles.
2. Heat ghee in a non-stick pan. Add asafoetida and cumin seeds and sauté for 30 seconds. Add cooked rice-gram mixture and mix well.
3. Add pickle paste and mix well. Switch off heat and top with chopped coriander.
4. Serve hot.
