Recipe in English:

Ingredients:
Homemade Cottage Cheese (Paneer):
-Taza doodh (Fresh milk) 2 litre
-Lemon juice 3 tbs
-Water 3 tbs
-Cooking oil 1-2 tbs
-Cooking oil 3-4 tbs
-Pyaz (Onion) cubes 1 medium
-Tamatar (Tomatoes) cubes 2 medium
-Shimla mirch (Capsicum) cubes 1 medium
-Water Cup or as required
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Achar gosht masala 3-4 tbs
-Kashmiri lal mirch powder (Kashmiri red chilli powder) 1 tsp
-Cooking oil Cup or as required
-Dahi (Yogurt) whisked Cup
-Water Cup or as required
-Namak (Salt) tsp or to taste
-Sugar tbs
-Garam masala powder tsp
-Hara dhania (Fresh coriander) chopped 2-3 tbs
-Hari mirch (Green chilli) sliced 1
-Hari mirch (Green chilli) sliced
-Hara dhania (Fresh coriander) chopped

Directions:
Homemade Cottage Cheese (Paneer):
-In a wok,add fresh milk & bring it to boil.
-Turn off the flame,in water and lemon juice,add in milk and stir gently,cover & let it rest for 5 minutes or until milk is curdled.
-On a bowl,place a strainer and muslin cloth,strain the curdle mixture through the strainer to separate whey and rinse thoroughly with water and squeeze out excess water and enclose curdle with muslin cloth and place heavy weight to drain excess moisture (30 minutes).Cottage cheese (paneer) is ready!
-Place prepared cheese on a clean working surface,cut into cubes & set aside.
-In frying pan,add cooking oil,prepared cottage cheese cubes & fry on low flame until golden (4-5 minutes) & set aside.
-In a wok,add cooking oil,onion & saut for a minute.
-Add tomatoes,capsicum & mix well for 1-2 minutes.
-Add water and mix well.
-Turn off the flame and blend the mixture to make a puree with the help of the blender.
-Turn on the flame,add ginger garlic paste,achar gosht masala,kashmiri red chilli powder & mix well.
-Add cooking oil,mix well & cook on low flame for 2-3 minutes.
-Add yogurt & mix well,cover & cook on low flame until oil separates (approx. 6-8 minutes).
-Now add cottage cheese cubes & mix well.
-Add water & mix well.
-Add salt,sugar & mix well.
-Add garam masala powder,fresh coriander,green chilli,cover & simmer on low flame for 4-5 minutes.
-Garnish with green chilli,fresh coriander & serve!

Homemade Cottage Cheese (Paneer):
-Karahi mein taza doodh dal ker ubal lein.
-Chulha bund ker dein,pani mein lemon juice dal dein aur doodh mein dal ker gently stir karein aur dhak ker 5 minutes ya doodh curdled ho janay tak rakh dein.
-Bowl mein strainer aur malmal ka kapra rakh dein aur curdle mixture ko strain ker ka whey alag ker lein phir water sa ache tarhan dho lein aur haathon ki madad sa pani ko squeeze ker lein,curdle ko muslin cloth mein bund ker lein aur heavy weight rakh dein tak excess moisture nikal jaye (30 minutes).Cottage cheese tayyar hai.
-Clean working surface per tayyar cheese dal dein aur cubes mein cut ker lein & side per rakh dein.
-Frying pan mein cooking oil aur tayyar cottage cheese cubes dal ker halki ancch per golden hunay tak fry ker lein (4-5 minutes) & side per rakh dein.
-Karahi mein cooking oil aur pyaz dal dein aur ek miute kliya saute karein.
-Tamatar aur shimla mirch dal ker 1-2 minutes kliya ache tarhan mix karein.
-Pani dal ker ache tarhan mix karein.
-Chulha bund ker dein aur blender ki madad sa mixture ki puree tayyar ker lein.
-Chulha on karein,adrak lehsan paste,achar gosht masala aur kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Cooking oil dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
-Dahi dal ker ache tarhan mix ker lein aur halki ancch per oil alag ho janay tak paka lein (approx. 6-8 minutes).
-Ab paneer cubes dal ker ache tarhan mix karein.
-Pani dal ket ache tarhan mix ker lein.
-Namak aur cheeni dal ker ache tarhan mix karein.
-Garam masala powder,hara dhania aur hari mirch dal ker dhak dein aur halki ancch per 4-5 minutes kliya dum per rakh dein.
-Hari mirch aur hara dhania dal ker serve karein!
