AFGHANI FATEER

Ingredients

1½ cups refined flour (maida)
1 tsp activated dried yeast
Salt to taste
2 tsps olive oil
Stuffing
3 medium potatoes, boiled, peeled and mashed
1 medium onion, sliced
½ tsp red chilli flakes
Salt to taste
2 tbsps chopped fresh coriander leaves
Melted butter as required


Method

1. Take refined flour in a large bowl, add activated yeast and ¾ cup water and knead to a soft dough. Add salt and olive oil and knead again. Cover with a damp muslin cloth and set aside to prove for 25-30 minutes.
2. To make the stuffing, take potatoes in a large bowl. Add onion, chilli flakes, salt and coriander leaves and mix till well combined.
3. Dust the refined flour on a worktop, place a portion of the dough and shape it into a large thin disc. Brush melted butter on top and spread the stuffing over it and spread it evenly. Start rolling from one end to make a log. Seal the edges. Start rolling from one end to the other to make a pinwheel. Dust a little refined flour and lightly roll to make a disc.
4. Place the disc on a greased baking tray, cover with a muslin cloth and set aside to prove for 10-15 minutes.
5. Preheat the oven at 180ºC.
6. Brush some melted butter on top and place the tray in the oven and bake for 25-30 minutes.
