AFGHANI FATEERIngredients1½ cups refined flour (maida)1 tsp activated dried yeast Salt to taste2 tsps olive oilStuffing3 medium potatoes, boiled, peeled and mashed1 medium onion, sliced½ tsp red chilli flakesSalt to taste2 tbsps chopped fresh coriander leavesMelted butter as requiredMethod1. Take refined flour in a large bowl, add activated yeast and ¾ cup water and knead to a soft dough. Add salt and olive oil and knead again. Cover with a damp muslin cloth and set aside to prove for 25-30 minutes.2. To make the stuffing, take potatoes in a large bowl. Add onion, chilli flakes, salt and coriander leaves and mix till well combined.3. Dust the refined flour on a worktop, place a portion of the dough and shape it into a large thin disc. Brush melted butter on top and spread the stuffing over it and spread it evenly. Start rolling from one end to make a log. Seal the edges. Start rolling from one end to the other to make a pinwheel. Dust a little refined flour and lightly roll to make a disc.4. Place the disc on a greased baking tray, cover with a muslin cloth and set aside to prove for 10-15 minutes.5. Preheat the oven at 180ºC.6.
