Agri Mutton Rassa | आगरी मटन रस्सा | Mutton Curry | Maharashtrian Recipe | Sanjeev Kapoor Khazana

Agri food is known for its spices and heat! This recipe is exactly that! Loaded with flavours and aroma. A perfect combination to rice or bhakri!

AGRI MUTTON RASSA

Ingredients

750 grams mutton, cut into 2 inch pieces on the bone
4 tbsps oil
10-12 garlic cloves
1 inch ginger piece, roughly chopped
3-4 green chillies, stemmed
1 cup grated dried coconut
1 cup fresh coriander leaves
8-10 black peppercorns
3-4 green cardamoms
1 black cardamom
1 inch cinnamon stick
2 bay leaves
3 medium onions, sliced
Salt to taste
2 medium tomatoes, chopped
1 tsp turmeric powder
1½ tbsps agri koli masala
2 medium potatoes, quartered
2 tbsps chopped fresh coriander leaves
1 tbsp lemon juice
Fresh coriander sprig for garnish
Bhakri for serving

Method

1. Heat 2 tbsps oil in a pan. Add garlic, ginger, green chillies and sauté for a few seconds.
2. Add dried coconut and sauté till golden brown. Add coriander and sauté for 2 minutes. Allow to cool slightly.
3. Transfer in a blender jar, add 1 cup water and grind to fine paste.
4. Heat remaining oil in a pan. Add black peppercorns, green cardamom, black cardamom, cinnamon, bay leaves and sauté till fragrant.
5. Add onions, salt and sauté till the onions turn golden brown.
6. Add tomatoes and sauté for 2 minutes on medium heat.
7. Add mutton and sear on high heat for 2-3 minutes.
8. Add turmeric powder, agri koli masala and mix well.
9. Add potatoes and mix well. Add 1 cup water and mix well.
10. Add the ground paste, 1½ cups water and mix well. Cover and cook on medium heat for 25-30 minutes.
11. Add coriander leaves, lemon juice and mix well.
12. Transfer in a serving bowl, garnish with coriander sprig and serve hot with bhakri.
