Adraki Gosht is a spicy and tasty gravy of mutton with a dominant ginger flavour. Ginger is used almost all mutton preparations but this dish also uses walnut which elevates the flavour. AKHROT ADRAKI MUTTONIngredients 800 grams mutton, cut into 1 inch pieces on the bone½ cup California Walnuts (akhrot), soaked for 30 minutes1 inch ginger (adrak), sliced¾ tsp turmeric powderSalt to taste2 tbsps oil 5-6 cloves3-4 green cardamoms6-8 black peppercorns1 inch cinnamon2 medium onions, chopped¼ cup browned onions¼ cup yogurt2 tsps ginger paste1 tbsp chopped garlic 1 tsp coriander powder½ tsp garam masala powderGinger strips for garnishingFew fresh coriander sprigs for garnishingMethod1. Boil mutton pieces alongwith ½ tsp turmeric powder and salt in 1½ cups water till fully done.2. Heat oil in a deep non-stick pan. Add cloves, cardamoms, peppercorns and broken cinnamon and sauté for 30 seconds. Add onions and sauté till light golden brown. 3. Blend drained California Walnuts, ginger slices, browned onions and yogurt into a paste. Add 2-3 tbsps water and blend to a smooth paste.4. Add ginger paste, garlic, remaining turmeric powder, coriander powder and garam masala powder and sauté for 1 minute. 5. Add the prepared paste and sauté for 1 minute. Add boiled mutton pieces alongwith the stock and salt, mix and simmer for 15-20 minutes.6. Serve hot garnished with ginger strips and coriander sprigs.
