Garmagaram paranthas prepared with flavourful aloo bhujiya. Serve it with ketchup and enjoy this unique parantha for your lunch or dinner!

ALOO BHUJIA PARANTHA

Ingredients

1½ cups whole wheat flour + for dusting
Salt to taste
1 tbsp ghee + for cooking
3-4 medium potatoes, boiled, peeled and mashed
1½ cups aloo bhujia
1 medium onion, chopped
2 tbsps chopped fresh coriander
2 green chillies, chopped
½ tsp red chilli powder
Tomato ketchup for serving

Method

1. Take whole wheat flour in a bowl. Add salt, ghee , 1 cup water and knead to soft dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
2. Take potatoes in a bowl. Add aloo bhujia, onion, coriander, green chillies, red chilli powder, salt and mix well.
3. Divide the dough and mixture into equal portions. Roll the dough into balls and make a cavity in the centre. Stuff a generous portion of the potato mixture and bring the edges together. Seal properly and flatten.
4. Dust some whole wheat flour on the surface and roll into a thi ck disk.
5. Heat a nonstick tawa. Place the prepared paranthas and cook till underside is golden brown.
6. Flip and cook the other side till it turns golden brown. Drizzle ghee and cook till both the sides are crisp.
7. Serve hot with tomato ketchup.
