Aloo Bhujiya | Sanjeev Kapoor Khazana

ALOO BHUJIYA

Ingredients

5-6 medium potatoes, peeled & grated
4 cups gram flour
Oil for deep-frying + for greasing
1 teaspoon garam masala powder
1 teaspoon red chilli powder
½ teaspoon asafoetida
Salt to taste + for sprinkling
½ teaspoon dried mint powder + for sprinkling

Method

1. Mix together potatoes, garam masala, chilli powder, asafoetida, salt and dried mint powder in a bowl. Add gram flour and mix well.
2. Knead into a soft dough.
3. Heat sufficient oil in kadai for deep-frying.
4. Fill the prepared mixture in a greased sev press. Press out strips directly into the hot oil.
5. Deep-fry till golden brown. Drain on absorbent paper.
6. Crush and store in an air-tight container.
