Simple yet mouth-watering gravy that is made with deliciously sweet corn kernels and amazingly versatile potatoes. A party of flavours and textures.

ALOO CORN MASALA

Ingredients

3 medium potatoes, peeled and cut into small cubes
1 cup sweet corn kernels
2 tbsps oil
1 tsp cumin seeds
½ tbsp finely chopped ginger
1 tbsp finely chopped garlic
1 green chilli, chopped
2 medium onions, chopped
1 large tomato, chopped
Salt to taste
1 tsp red chilli powder
¼ tsp turmeric powder
1 tsp cumin powder
2 tsps coriander powder
2 tbsps chopped fresh coriander leaves
½ tsp garam masala powder
Fresh coriander sprig for garnish
Parantha to serve
Salad to serve

Method

1. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add ginger, garlic and green chilli and sauté for a minute.
2. Add onions and mix and sauté till golden brown. Add tomato and salt and mix. Cover and cook for 5-6 minutes on medium heat, sautéing in between.
3. Add red chilli powder, turmeric powder, cumin powder, coriander powder and coriander leaves and mix and sauté for 1 minute on low heat.
4. Add potatoes, sweet corn and garam masala powder and sauté on high heat for 2-3 minutes. Add 1 cup water, mix, cover and cook for 8-10 minutes or till the potatoes are soft.
5. Take the pan off the heat and transfer the corn aloo masala in a serving bowl and garnish with coriander sprig. Serve hot with parantha and salad.
