Simple yet mouth-watering gravy that is made with deliciously sweet corn kernels and amazingly versatile potatoes. A party of flavours and textures.ALOO CORN MASALAIngredients3 medium potatoes, peeled and cut into small cubes1 cup sweet corn kernels2 tbsps oil1 tsp cumin seeds½ tbsp finely chopped ginger1 tbsp finely chopped garlic1 green chilli, chopped2 medium onions, chopped1 large tomato, choppedSalt to taste1 tsp red chilli powder¼ tsp turmeric powder1 tsp cumin powder2 tsps coriander powder2 tbsps chopped fresh coriander leaves½ tsp garam masala powderFresh coriander sprig for garnishParantha to serveSalad to serveMethod1. Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add ginger, garlic and green chilli and sauté for a minute. 2. Add onions and mix and sauté till golden brown. Add tomato and salt and mix. Cover and cook for 5-6 minutes on medium heat, sautéing in between.3. Add red chilli powder, turmeric powder, cumin powder, coriander powder and coriander leaves and mix and sauté for 1 minute on low heat.4. Add potatoes, sweet corn and garam masala powder and sauté on high heat for 2-3 minutes. Add 1 cup water, mix, cover and cook for 8-10 minutes or till the potatoes are soft.5. Take the pan off the heat and transfer the corn aloo masala in a serving bowl and garnish with coriander sprig.
