About Aloo Bharta -
Bhurta' or bharta is a lightly fried mixture of mashed vegetables (chakata) in the cuisine of India, Bangladesh and Pakistan. Bhurta recipes vary depending upon the region and the vegetable used. In general, the ingredients are a vegetable, such as aloo (potato), baingan (eggplant), or kalara (bitter melon), Tamatar (tomato), or pyaz (onion), Chaunk (Tempered spices). Aloo Bharta is a South Asian dish prepared with boiled potatoes (aloo) and mixing it with tomato, onion, herbs and spices. Mashed potato is then mixed with chopped tomato, browned onion, ginger, garlic, cumin, fresh cilantro (coriander leaves), chili pepper, and mustard oil or neutral vegetable oil. Traditionally, the dish is often eaten with flatbread (specifically roti or paratha). Also served with rice and dal.
