Aloo Ka Rassawala Shaak | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

ALOO KA RASSAWALA SHAAK

Ingredients

4 medium potatoes (aloo), boiled, peeled and cut into ½ inch pieces
1 cup yogurt
1 tablespoon gram flour (besan)
Salt to taste
¼ teaspoon turmeric powder
2 tablespoons ghee
½ teaspoon cumin seeds (jeera)
A pinch of asafoetida (hing)
7-8 curry leaves
½ inch ginger, chopped
1-2 green chillies, finely chopped
¼ teaspoon red chilli powder
½ teaspoon garam masala powder + for sprinkling

Method

1. Take yogurt in a bowl. Add gram flour, salt, turmeric powder and ¾ cup water and whisk well.
2. Heat ghee in a deep non-stick pan. Add cumin seeds and let it cook till its light golden brown and fragrant.
3. Add asafoetida, curry leaves and ginger and sauté for 30 seconds. Add green chillies and sauté for 1 minute.
4. Add chilli powder and yogurt mixture, mix and bring the mixture to boil. Add potato pieces, lightly mix, reduce heat and cook for 4-5 minutes.
5. Add garam masala powder and mix well.
6. Sprinkle some garam masala powder and serve hot.
