Aloo matar is a staple in every Indian household and is an all-time favourite to all. Try this version as it's easy, quick and super delicious!

ALOO MATAR

Ingredients

5 medium potatoes, peeled
4 tbsps oil
2 tsps cumin seeds
1 cup Kings Cook Smart Onion
2 medium tomatoes, chopped
1 cup fresh tomato puree
1 tbsp ginger-garlic paste
½ tsp turmeric powder
1 tbsp coriander powder
2 tsps cumin powder
2½ tsps red chilli powder
1 cup fresh green peas
Salt to taste
½ tsp garam masala powder
Coriander sprig for garnish
Paranthas for serving

Method

1. Heat 2 tbsps oil in a nonstick pan. Add 1 tsp cumin seeds and once they start to change the colour, Add Kings Cook Smart Onion and sauté for a few seconds.
2. Sprinkle ¼ cup water and mix well.
3. Heat remaining oil in a nonstick pan. Take remaining Kings Cook Smart Onion in a bowl. Add ¼ cup water and mix well.
4. Add remaining cumin seeds to the oil and once they start to change the colour, add the hydrated Kings Cook Smart Onion and sauté for 2-3 minutes. Add the previous batch to the pan and mix well.
5. Add tomatoes, tomato puree and mix well. Add ginger-garlic paste and mix well.
6. Add turmeric powder, coriander powder, cumin powder, red chilli powder and mix well. Cook for 2-3 minutes.
7. Cut potatoes into 1 inch pieces. Transfer 1½ cups of prepared masala in a pressure cooker, add potatoes, green peas, 2½ cups water and mix well.
8. Add salt, garam masala powder and mix well.
9. Cover with lid, cook on medium heat till 2 whistles are released. Open the lid once the pressure settles completely.
10. Transfer into a serving bowl. Garnish with coriander sprig and serve hot with paranthas.
