Boil it for 5 to 8 minutes then take it out and set aside. In another pan add oil, then add onion and cook until translucent in color.Add cumin, ginger garlic paste and cook for 2 to 3 minutes. Then add tomatoes, salt, turmeric, red chili powder and cook for 5 to 6 minutes. Add boiled fenugreek, water as required and cook for 5 to 6 minutes. Then add potatoes, cook it for 3 to 4 minutes. Then add green chilies, garam masala, water as required and let it simmer for 6 to 7 minutes. Uncover the lid and cook on high flame for 3 to 4 minutes. Aloo meethi is ready, serve with roti.
