Ingredients:
1 kg Fenugreek
1/2 kg Potatoes (cube)
1 tbsp Ginger garlic paste
1 tsp Cumin seeds
Salt to taste
2 Green chilies
1 cup Tomatoes (chopped)
1 cup Onion (chopped)
1 tsp Turmeric powder
1/2 tbsp Red chili powder
1/2 tsp Garam masala

Directions:
Take a pan add water when it starts simmering then add fenugreek.
Boil it for 5 to 8 minutes then take it out and set aside.
In another pan add oil, then add onion and cook until translucent in color.
Add cumin, ginger garlic paste and cook for 2 to 3 minutes.
Then add tomatoes, salt, turmeric, red chili powder and cook for 5 to 6 minutes.
Add boiled fenugreek, water as required and cook for 5 to 6 minutes.
Then add potatoes, cook it for 3 to 4 minutes.
Then add green chilies, garam masala, water as required and let it simmer for 6 to 7 minutes.
Uncover the lid and cook on high flame for 3 to 4 minutes.
Aloo meethi is ready, serve with roti.

Preparation time: 20-25 minutes
Cooking time: 30-35 minutes
Serving: 3-4
