ALOO SARSON SAAGA beautiful winter delight that involves seasonal greens mixed with boiled baby potatoes and spices that will give you the perfect warmth when the climate gets cold. Ingredients2 cups shredded mustard leaves (sarson)1½ cups shredded bhathua leaves1 cup shredded spinach leaves (palak)200 grams baby potatoes (aloo), boiled, peeled and halved2 tsps oil2 tsps ghee1 tbsp finely chopped garlic1 inch ginger, finely chopped2-3 green chillies, chopped1 large onion, finely chopped½ tsp turmeric powderSalt to taste½ tsp Tata Sampann Garam Masala Powder1½ tbsps white butter (makhan) + to serveMakkai di rotis to serveMethod1. Boil 1 cup water in a non-stick pan, add mustard leaves, bhathua leaves, and spinach leaves and cook for 2-3 minutes. Take the pan off the heat, allow to cool slightly, transfer into a blender jar and blend to a fine paste. 2. Heat oil and ghee in a non-stick pan, add garlic, ginger, green chillies and onion and sauté till golden brown. 3. Add turmeric powder and mix, add potatoes, salt and toss well. Cook till they turn golden brown.4. Add the blended paste, mix and cook for 1-2 minutes.5. Add Tata Sampann Garam Masala Powder, mix and add white butter, mix and take the pan off the heat.6.
