A delicious and spicy dish of potatoes and drumsticks that you can add to your regular meals and enjoy with chapattis and salad. ALOO SINGH KI SABZIIngredients 2 large potatoes (aloo), cut into 1 inch pieces2 drum sticks (singh)1 tbsp ghee1 tsp cumin seeds2 tbsps finely chopped garlic3-4 green chillies, slit1 large onion, finely chopped1 medium tomato, finely choppedSalt to taste2 medium tomatoes, pureed1 tsp red chilli powder½ tsp turmeric powder¾ tsp cumin powder1 tsp coriander powder2 tbsps scraped fresh coconut2 tbsps chopped fresh coriander leaves½ tsp Tata Sampann Garam MasalaFresh coriander sprig for garnishChapattis to serveMethod1. Cut drumsticks in 2 inch pieces and peel each piece. 2. Heat ghee in a non-stick pan, add cumin seeds and let them change colour. Add garlic and green chillies and sauté for 1-2 minutes or till garlic turns golden brown.3. Add onion and mix and sauté for 1-2 minutes. Add tomatoes and mix well. Add salt and mix, add tomato puree and stir and cook for 1-2 minutes.4. Add red chilli powder, turmeric powder, cumin powder, coriander powder and mix. Cover and cook for 4-5 minutes or till the oil separates.5. Add potatoes and drumsticks and mix. Add 1 cup water and mix, cover and cook for 8-10 minutes. 6. Add scraped fresh coconut, chopped coriander, and Tata Sampann Garam Masala and mix. Take the pan off the heat and transfer this in to a serving bowl.7.
