ALOO TUK PEPPER SALT

Ingredients
250 gm baby potatoes, boiled
½ cup spring onions, chopped
1 tablespoon chopped garlic
½ teaspoon chilli flakes
Salt to taste
Pinch of crushed black peppercorns
Pinch of sugar
Oil for frying

Method

1. Once the boiled baby potatoes are cooled, hold them between
the palms and flatten them.
2. Meanwhile heat oil for frying the flattened potatoes.
3. Fry the potatoes till crisp and golden brown in colour. Drain on
an absorbent paper.
4. Heat one tablespoon oil in a nonstick wok, add garlic and
sauté for a minute.
5. Add spring onions, salt, crushed black peppercorns and chilli
flakes.
6. Add the fried potatoes and toss everything together to
combine well. Serve immediately.
