AMRITSARI NUTRI

Ingredients

2 cups soya nuggets (nutri), soaked in water for 15-20 minutes
2 tsps tea leaves
Salt to taste
2 tbsps oil
1 large onion, chopped
5-6 garlic cloves, crushed
1 inch ginger, crushed
1-2 green chillies, crushed
½ tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
½ tsp dry mango powder (amchur)
½ cup fresh tomato puree
3 tbsps blanched spinach puree
1 tbsp + 1 tsp butter + for garnish
1 medium capsicum, chopped
½ tsp garam masala powder
2 tbsps chopped fresh coriander leaves + for garnish

Method

1. Heat 2 cups water in a pressure cooker, drain and add the soaked soya nuggets.
2. Take a muslin cloth, add tea powder and tie into a knot. Add this into the cooker, add salt and mix, cover and cook under pressure till 2-3 whistles are given out.
3. Heat oil in a non-stick pan; add onion, and a pinch of salt and sauté till golden brown.
4. Add 1 tsp crushed garlic, 1 inch ginger peeled and crushed; 1-2 green chillies crushed sauté for a minute on a medium heat.
5. Add ½ tsp red chilli powder, 1 coriander powder, ½ tsp cumin powder, 1/2 tsp dried mongo powder and sauté for a minute.
6. Add ½ cup fresh tomato puree, mix. Cover and cook for 2-3 minutes or till tomatoes are done.
7. Add 3 tbsps spinach puree, 1 tbsp butter and mix .Add 1 medium capsicum and sauté for a minute.
8. Open the cooker once the pressure has reduced completely,add cooked soya nuggets in the pan and mix well.
9. Lightly mash the soya nuggets using the back of the spoon. Add ¼ cup water, ½ tsp garam masala powder and 1 tsp butter and mix. Cook for 2-3 minutes.
10. Add coriander leaves 2 tbsps and mix. Take the pan off the heat and transfer the Amritsari nutri in a serving bowl.
11. Garnish with coriander leaves and butter. Serve hot.
