Crispy fried boiled eggs tossed with a spicy mouth-watering chilli sauce makes up for a quick and an exciting dish!

Ingredients

6-8 eggs, hard boiled
3-4 green chillies, slit
2-3 fresh red chillies, slit
¼ cup corn flour
½ cup refined flour (maida)
Crushed black peppercorns to taste
Salt to taste
1 tbsp oil + for deep frying
1 tbsp finely chopped garlic
1 inch ginger, finely chopped
1 small onion, diced and layers separated
1 small green capsicum, diced
1 small yellow capsicum, diced
1 small red capsicum, diced
1 tbsp red chilli sauce
1 tbsp oyster sauce
2 tbsps chopped spring onion greens
Spring onion green curls for garnish

Method

1. Take corn flour in a bowl, add refined flour, crushed black peppercorns, salt and ½ cup water and mix till a smooth batter is formed.
2. Heat sufficient oil in a kadai.
3. Dip each egg halves in the batter and slide into the hot oil. Deep fry the eggs till golden and crisp. Drain on absorbent paper.
4. To make the sauce, heat oil in a non-stick pan. Add garlic, ginger, green chillies and fresh red chillies and sauté for 1-2 minutes.
5. Add onion, green capsicum, yellow capsicum and red capsicum and mix and sauté for 1-2 minutes on high heat.
6. Add red chilli sauce and oyster sauce and mix well. Pour ¼ cup water, mix and cook for 1-2 minutes.
7. Add fried eggs and adjust salt and mix till each egg is coated with the sauce. Add spring onion greens, mix and take the pan off the heat.
8. Transfer anda chilli in a serving bowl and garnish with spring onion green curls and serve hot.
