Ingredients6-8 eggs, hard boiled3-4 green chillies, slit2-3 fresh red chillies, slit¼ cup corn flour½ cup refined flour (maida)Crushed black peppercorns to tasteSalt to taste1 tbsp oil + for deep frying1 tbsp finely chopped garlic1 inch ginger, finely chopped1 small onion, diced and layers separated1 small green capsicum, diced1 small yellow capsicum, diced1 small red capsicum, diced1 tbsp red chilli sauce1 tbsp oyster sauce2 tbsps chopped spring onion greensSpring onion green curls for garnishMethod1. Take corn flour in a bowl, add refined flour, crushed black peppercorns, salt and ½ cup water and mix till a smooth batter is formed.2. Heat sufficient oil in a kadai.3. Dip each egg halves in the batter and slide into the hot oil. Deep fry the eggs till golden and crisp. Drain on absorbent paper.4. To make the sauce, heat oil in a non-stick pan. Add garlic, ginger, green chillies and fresh red chillies and sauté for 1-2 minutes.5. Add onion, green capsicum, yellow capsicum and red capsicum and mix and sauté for 1-2 minutes on high heat.6. Add red chilli sauce and oyster sauce and mix well. Pour ¼ cup water, mix and cook for 1-2 minutes.7. Add fried eggs and adjust salt and mix till each egg is coated with the sauce. Add spring onion greens, mix and take the pan off the heat.8. Transfer anda chilli in a serving bowl and garnish with spring onion green curls and serve hot.
