Anjeer Barfi | Diwali Special Recipe | Sanjeev Kapoor Khazana

Anjeer Burfi is really simple to make and is healthier than most others, because there is no additional sugar in it! This video has step-by-step instructions to make a perfect Anjeer Burfi. Once you try this one, store bought burfis will never be good enough!

ANJEER BARFI

Ingredients

8-10 figs (anjeer), soaked for 2-3 hours
3-4 tablespoons ghee + for greasing
12-15 dates, seeded and soaked for 2-3 hours
10-12 cashewnuts, finely chopped
8-10 almonds, finely chopped
12-15 pistachios, finely chopped
Silver varq as required

Method

1. Grease a baking tin with some ghee.
2. Grind figs and dates individually to make a smooth paste and transfer in 2 different bowls.
3. Heat ghee in a non-stick pan. Add fig paste and date paste, mix continuously and cook on medium heat till thick.
4. Add ¾ of the cashewnuts, ¾ of the almonds and ¾ of the pistachios, mix and cook for 3-5 minutes or till well combined.
5. Put the mixture into the greased baking tin, level it out and tap. Cover the top with some varq and cool.
6. Cut and serve garnished with remaining nuts.

Preparation Time: 15-20 minutes
Cooking Time: 18-20 minutes
