This financier recipe hits the spot with a rich, nutty, apple flavor, a chewy interior, and a crisp buttery crust.

APPLE ALMOND FINANCIERS

Ingredients

2 medium red apples, cored and peeled
100 grams almond paste
100 grams castor sugar
100 grams butter
3 eggs
43 grams refined flour (maida)
Espresso for serving

Method

1. Preheat oven to 200° C.
2. Put almond paste in a bowl. Add castor sugar and whisk using an electric beater.
3. Add butter and whisk till light and fluffy. Add eggs one by one and whisk. Add flour and whisk well into a smooth batter.
4. Slice the apples.
5. Place a silicon financier mould tray on a baking tray. Fill the moulds with the batter and level it out. Place one apple slice in the center of each prepared mould and slightly press it in.
6. Put the tray into the preheated oven and bake for 15-20 minutes. Remove from oven, cool and demould.
7. Dust some icing sugar on top and serve with espresso.
