Finely chopped apples and golden apricot flavoured freshly baked cake.

APPLE AND APRICOT CAKE

Ingredients

350 gms apples, finely chopped
200 gms golden apricots, finely chopped
300 gms refined flour + for dusting
200 gms butter + for greasing
200 gms brown sugar
4 eggs
3 tbsps cocoa powder
1 tbsp instant coffee powder
½ tsp cinnamon powder
2 tsps baking powder
100 ml milk
200 gms chocolate chips

Method

1. Preheat oven at 170ºC. Grease a square cake tin with butter and dust with refined flour.
2. Cream together butter and brown sugar with the help of an electric beater till light.
3. Add eggs and beat again. Scrape the sides of the bowl and mix.
4. Sift together cocoa powder, coffee powder, cinnamon powder, refined flour and baking powder directly into the bowl. Beat again.
5. Add milk and continue beating. Add apples, apricots and mix till well blended into a batter. Add chocolate chips and mix well.
6. Pour batter in the prepared cake tin, tap a little and put the tin the preheated oven. Bake for 75-90 minutes.
7. Remove from heat, cool and demould. Cut into slices and serve.
