Finely chopped apples and golden apricot flavoured freshly baked cake.APPLE AND APRICOT CAKEIngredients350 gms apples, finely chopped200 gms golden apricots, finely chopped300 gms refined flour + for dusting 200 gms butter + for greasing 200 gms brown sugar4 eggs3 tbsps cocoa powder1 tbsp instant coffee powder½ tsp cinnamon powder2 tsps baking powder100 ml milk200 gms chocolate chipsMethod1. Preheat oven at 170ºC. Grease a square cake tin with butter and dust with refined flour.2. Cream together butter and brown sugar with the help of an electric beater till light.3. Add eggs and beat again. Scrape the sides of the bowl and mix.4. Sift together cocoa powder, coffee powder, cinnamon powder, refined flour and baking powder directly into the bowl. Beat again.5. Add milk and continue beating. Add apples, apricots and mix till well blended into a batter. Add chocolate chips and mix well.6. Pour batter in the prepared cake tin, tap a little and put the tin the preheated oven. Bake for 75-90 minutes.7. Remove from heat, cool and demould. Cut into slices and serve.
