Apple, Cinnamon and Pecan Tea Cake Recipe | Glen And Friends Cooking

Cake Ingredients
185g butter, softened
1¼ cup (275g) sugar
3 eggs
2 tsp vanilla
1½ cups (225g) all purpose flour
1 tsp (5 mL) baking powder
1½ tsp (7 mL) ground cinnamon
½ cup (125 mL) sour cream
½ cup (125 mL) chopped pecans
4 small green apples, peeled, halved and cored

Topping Ingredients:
melted butter for brushing
2 Tbsp (30 mL) sugar
1 tsp (5 mL) ground cinnamon

Method:
Preheat the oven to 350ºF.
Place the butter, and sugar in a bowl and beat until light and creamy. Gradually add the eggs and beat well. Add flour, cinnamon, and baking powder to butter mixture and stir in sour cream until combined. Stir in pecans then spoon the mixture into springform pan.

Cut a row of deep slits in each apple half and press apples into the batter. Bake for 1 hour & 15 minutes - ish or until cooked when tested with a skewer. Remove from the oven and brush the cake with melted butter & Combine the sugar and cinnamon and sprinkle over the top.
