Arachuvitta Sambar (Vegetable and Lentil Gravy) by Preetha | India Food Network

Arachuvitta sambar is a type of sambar that has freshly ground masala made of coconut, coriander seeds, bengal gram and dried chillies. This is a very traditional South Indian Sambar. This sambar is very tasty, easy to prepare, and one does not need the sambhar powder to prepare this.

Ingredients for the Paste
1 Tsp Oil
½ Tsp Fenugreek seeds
3 - 6 Dried Red Chillies
1 Tbsp Chana Dal (Bengal Gram Spilt and Skinned)
½ Tsp Of Peppercorns
¼ Cup Of Coconut
1 Tbsp Of Dhaniya Seeds (Coriander Seeds)
5g Raw Rice
Hing (asafetida)

Other Ingredients
1 Tsp Mustard Seeds
Pinch Of Turmeric
Salt As Per Taste
Few Curry Leaves
Hing (Asafetida) Dissolved In Water
1 Cup Of Brinjals
½ Cup Petha (Ash Gourd)
Few Cluster Beans
Few Lady Fingers
Gooseberry Sized Tamarind Soaked In Water
2 - 3 Tbsp Tuvar Dal (Pigeon peas) Soaked and Boiled in 1 of Cup Water with Turmeric
