This sweet and tangy south indian sauce made with arbi ie colacassia is to be had and to be had with curd rice http://www.vahrehvah.com/arbi-with-sambhar-masalaINGREDIENTS ARBI 250 GREDCHILLY 3 NMUSTARD SEED ½ TSFRNUGREEK SEEDS 1/4 TSURAD DAL ½ TSCURRY LEAVES 6 NTURMARIC ¼ TSCHOPPRD ONIONS ½ CGINGER GARLIC PASTE 1 TCHILLY POWDER 1TBSAMBHAR POWDER 1 TBTAMARIND JUICE ½ CJAGGERY ¼ CSALT METHOD Boil and peel Arbi cut them in length wide. Heat oil in pan and fry the pieces of arbi and transfer to another plate, Take same oil and add red chilly, mustard seeds, fenugreek seeds, urad dal, curry leaves, wait till they splitter, add turmeric and chopped onion and ginger garlic paste and chilly powder, sambhar powder, and tamarind juice. Add some water and jaggery, cover it with lid let it cook for 10 to 12 minutes and add arbi and mix it, cook it for 5 to 6 minutes and switch off the flame.
