Arisi Vella Puttu

Usually, we make this traditional dish during navrathiri days, or on special Fridays as a neivedhyam for Goddess.
In the Tamil Brahmin community, this puttu is made by athai(Aunt) when a girl at home attains puberty.



Ingredients:
Rice-1 cup
Ghee- 3 tablespoons
Cashews-10
Shredded Coconut or Desiccated coconut-1/2 cup
Jaggery-1 cup

Directions:
1. Rinse 1 cup raw rice and soak in it water for 30 minutes.
2. Strain the water. Spread the soaked rice on dry cloth for 30 minutes.
3. Dry roast the rice until golden brown . Let it cool down a bit.
4. Grind it into a slightly coarse consistency..
5. Mix a pinch of salt and turmeric powder with 1 cup of warm water.
6. Sprinkle water little at a time to make the rice little moist.
7. When you hold and press the flour , it should hold the shape. When you drop it, it should crumble.
8. Steam it for 10 minutes.
9. Pulse it in mixie/blender to get sand like texture.
10. Roast 10 cashews and 1/2 cup shredded coconut in ghee. Set aside.
11. Heat 1 cup jaggery with 1/4 cup water over medium flame.
12. Let it boil until hard ball consistency(when you drop a small amount of jaggery in water, you should be able to form a hard ball out of that mixture )
13. Switch off the flame immediately. Mix jaggery with rice flour.
14. Add roasted cashews and coconut. Mix it well.
