Asian Crunch Salad

For the salad:
1 spinach bunch
1 red pepper
1 cucumber
Shredded purple cabbage

For the dressing:
1/2 cup Gefen Creamy Peanut Butter
2 tablespoons fresh lime juice or Heaven & Earth Lime Juice
2 tablespoons rice vinegar
2 tablespoons Gefen Soy Sauce
1 teaspoon Manischewitz Honey
1 teaspoon toasted sesame oil
1/4 teaspoon ground ginger
1 to 2 tablespoons water, as needed

For the crunch:
Spring roll sheets
Oil (for frying)
1 tsp. salt

Cut your spring rolls sheets into thin strips
Heat a pan up with oil (to fry)
Once the oil is hot, place your spring roll strips into the hot oil
When the strips are golden brown, take out the strips and place on a paper towel to collect excess oil
Sprinkle salt on the top of the strips
Assemble your favorite salad and top with the crunchy spring roll strips
