Aubergine Jam Recipe Candied Eggplant

1kg of peeled aubergine, placed in 3 litres of water
3 cups of granulated sugar
3 sticks of cinnamon
Water
1 1/2 cups of pickling lime solution
1 teaspoon of citric acid
