Authentic Turkish Flaky Pastry "Afyon Bukme" is a famous bread type filled with green lentils and has poppy seed paste between the layers of the dough. The authentic method, it makes a very flaky dough with a nutty flavor. Ingredients for Afyon Bukme:For the dough:1+1/2 cups water at room temperature1 tbsp yogurtAbout 4+1/2 all-purpose cups flour1 tsp saltFor the filling:2 cups green lentils2 onions4-5 tbsp vegetable oil1/2 tsp each black pepper, red pepper flakes1 tsp saltTo butter between the layers2 full tbsp (60gr.) butter (use some of it, animal fat if you can find as it has in the original recipe)4-5 tbsp olive oil or vegetable oil3 tbsp poppyseed pasteenough vegetable oil to have a spreadable consistencyNote: There are two versions in the recipe, one using only oil for the layers. Other uses poppyseed paste too.
