Avocado Bhel Healthy Recipe Sanjeev Kapoor Khazana

Give a Mexican touch to your favourite bhel, while also making snacking quick and light with cereal puffs and avocado. Tuck in papdis and there you go, an interesting variant to bhel.

AVOCADO BHEL

Ingredients

avocado
1 tsp oil
tsp turmeric powder
Salt to taste
1 cups puffed rice (kurmura)
1 cup puffed wheat
cup puffed barley (jau)
cup puffed quinoa
1 tsp chaat masala
1 large onion, finely chopped
1 medium tomato, finely chopped
2 green chillies, finely chopped
1 tbsp lemon juice
Black salt to taste
1 tbsp chopped fresh coriander leaves + for garnish
2 tbsps sev
Crisp papdis to serve

Method

1. Heat oil in a non-stick pan. Add turmeric powder, salt and mix well. Cook for 30 seconds. Add puffed rice and saut for 1 minute. Transfer in a large bowl.
2. Add puffed wheat, puffed barley, puffed quinoa and tsp chaat masala and mix well.
3. Add onion, tomato, green chillies, cut the avocado into small pieces and add into the bowl. Add lemon juice, salt, remaining chaat masala and black salt and mix well.
4. Add coriander leaves and sev and mix well. Transfer into a serving bowl, garnish with coriander leaves and crisp papdis.
