Baba Ghanoush is a popular Middle eastern recipe -- a type of a dip made with roasted eggplant pulp added to some spices.

Ingredients:

Eggplant (big) 2n
Oil ½ ts
Salt
Lime juice 1 ts
Vinegar 1 ts
Sesame seed paste 1 tb
Olive oil 2 tb
Parsley chopped 1 tb
Sumac pinch

Directions:

Take big size of eggplant and apply little oil and cook this on a stove top and let it cool down and peel the skin and cut them into pieces put this into the blender and add salt, squzee lime juice, vinegar, sesame seed paste, olive oil, make a paste, transfer into a bowl and add chopped parsley, sprinkle sumac powder and pour olive oil on top.

Serve this with bread, phulka.
