A popular rice recipe from Hyderabad which is prepared with minimal ingredients but has maximum flavours!BAGHARE CHAWALIngredients1½ cups Basmati rice, soaked for 20 minutes and drained 2 tbsps oil4 cloves4-5 black peppercorns2 green cardamoms¼ inch cinnamon stick2 green chillies, slit1 tsp caraway seeds (shahi jeera)1 large onion, thinly sliced1 tbsp ginger-garlic pasteSalt to taste2 tbsps chopped fresh coriander leaves2 tbsps chopped fresh mint leavesFresh coriander sprig for garnishMethod1. Heat oil in a non-stick deep pan. Add cloves, black peppercorns, green cardamoms, and cinnamon stick and sauté till fragrant. 2. Add green chillies and caraway seeds and sauté for a few seconds.3. Add onion and mix. Cook till it turns golden. 4. Add ginger-garlic paste and mix well. Cook for 1-2 minutes or till the raw smell goes away. 5. Add the rice and gently mix till well combined. Pour 3 cups water and stir to mix.6. Add the salt and mix. Cook on high heat till the mixture comes to a boil. 7. Reduce the heat to low, cover and cook for 10-12 minutes or till the rice is cooked completely. 8. Add coriander leaves and mint leaves and gently mix till well combined. Switch the heat off, cover the pan and set aside for 10 minutes.9. Serve hot garnished with coriander sprig.
