Baida Roti | Cooksmart | Sanjeev Kapoor Khazana

A favourite midnight snack of Mumbai youngsters stuffed with spicy chicken mince mixture.

BAIDA ROTI

Ingredients

9 eggs
1 cup refined flour (maida)
Salt to taste
1 tbsp oil
⅛ tsp baking powder
1 tbsp oil + for cooking
1 medium onion, finely chopped
1 tbsp ginger-garlic paste
1 cup chicken mince
2 small tomatoes, finely chopped
2 green chillies, finely chopped
A pinch turmeric powder
1½ tsps red chilli powder
½ tsp garam masala powder
A fresh coriander sprig for garnishing

Method

1. Mix together refined flour, salt, oil, baking powder and 1 egg in a bowl. Add ¼ cup water and knead into a soft dough.
2. Divide the dough into 4 equal portions and roll out into 8 inch square rotis.
3. Heat 1 tbsp oil in a non-stick pan. Add onion and sauté for 1 minute.
4. Break remaining eggs into a bowl and beat well.
5. Add ginger-garlic paste to the pan, mix and sauté for ½ minute. Add chicken mince, mix and cook for 2 minutes.
6. Add tomatoes, green chillies, turmeric powder, red chilli powder and salt and mix well. Add ¾ cup water and mix well. Add garam masala powder, mix well, cover and cook on medium heat till chicken mince is cooked and mixture is dry.
7. Heat a non-stick tawa. Place each roti on it and cook for 2 minutes on each side. Drizzle some oil on the sides and cook.
8. Pour some beaten egg on top and spread, cook for 1 minute. Flip and cook till the egg is cooked.
9. Place a portion of cooked chicken mince mixture in the centre, fold in the sides to make a square packet. Press and pour some more beaten egg on top. Flip, drizzle some more oil on the sides and cook, turning sides, till both sides turn golden and crisp.
10. Cut into squares and serve hot garnished with coriander sprig.
