Baingan Bharta By Roopa Nabar || Coastal Kitchen | India Food Network

This week Roopa shows you an authentic coastal preparation of aubergine vangyache barit or baingan ka bharta as we all know it!

Ingredients:
1 big sized Aubergine/ Brinjal
1 onion finely chopped
1/2 cup fresh grated coconut
2 green chillis cue roughly
2 tbsp fresh coriander cut
1 tbsp grated jaggery
1 tsp tamarind pulp
salt
1 tsp oil

Method:
Rub oil on aubergine and roast it on direct flame for 15 minutes, till shin is charred black.
Once cold, peel off skin and take the flesh in a bowl.
Add chopped onion, chillis, coriander, grated coconut, salt jaggery & tamarind.
Mix together till becomes a homogenous mixture and serve.
