Baingan Bharta
Ingredients
• Brinjal- 1Whole
• Onion-20gms
• Tomatoes-20gms
• Garlic-10gms
• Green Chillies-5gms
• Red Chilly Powder-1Tsp
• Garam Masala-1Tsp
• Turmeric-1Tsp
• Cumin Powder-1Tsp
• Curd-20ml
• Peanuts-20gms
• Coriander Leaves- For Garnish
• Salt- To Taste
• Oil-20ml

Method
• Heat the oil, add garlic and onion and sauté for a while. Add chopped tomatoes & cooked till the tomatoes are nicely mashed.
• Add green chillies & the powdered spices (red chilly powder, turmeric, cumin powder & garam masala).
• Add whole Brinjal which has been roasted, peeled & minced. Mix it well
• Add curd, salt & crushed peanut
• Finish it off by adding coriander leaves & chopped onions.
• Garnish it with coriander leaves, crushed peanuts & chopped green chillies.
