A must try BAINGAN KA CHOKHAIngredients1 large green brinjal (baingan)3-4 garlic cloves2 medium tomatoes1 medium onion, finely chopped2 green chilli, chopped3 tbsps chopped fresh coriander leavesSalt to taste2 tbsps mustard oilMethod1. Make a few slits on the baingan, insert a garlic clove into each slit. 2. Heat a wire rack on direct flame, place the baingan and tomatoes over it and roast, rotating in between till well charred from all sides. 3. Place the roasted baingan and tomatoes on a worktop, peel, trim the tops and finely chop them along with the roasted garlic cloves. Transfer in a bowl, add onion, green chilli, coriander leave, salt and mustard oil and mix till well combined. 4. Transfer into a serving bowl and serve.
