Brush some oil over brinjal. Place it on direct heat and roast on low heat from all sides. Peel and transfer onto a plate.2. Heat oil in a non-stick pan. Add onions and sauté till golden. Add tomatoes, mix and cook for 3-4 minutes or till oil separates. 3. Mash the brinjal.4. Add chilli powder and salt and mix well. Add mashed brinjal, mix and cook for 3-4 minutes. Add chopped coriander and mix well.5.
