Baingan Masala | Eggplant Curry | बैंगन मसाला | Indian Mom's Kitchen

Hyderabadi Baingan Masala is a very good accompaniment for biryanis. In this video, I have shown how to make Baingan masala at home very easily. So next time you make Biryani, serve it along with homemade Eggplant Curry.

Ingredients in the order of instructions:
1/2 cup Peanuts
15 Cashew nuts
3 tsp White Sesame seeds
2 tbsp Khus Khus
1/2 cup desiccated Coconut
500 gms Baingan/Eggplant
5 Green Chillies
5 tbsp Oil
1/2 tsp Mustard seeds
1/2 tsp Cumin
A little Mehi/Fenugreek seeds
2 Onions
Few Curry leaves
1 tbsp Ginger Garlic paste
1 tbsp Red Chilli powder
1 tbsp Coriander powder
1/4 tsp Turmeric powder
1/2 tbsp Cumin powder
1 tsp Garam masala
1/2 cup Tamarind water
1 tbsp Jaggery
Salt to taste
1cup Water
Coriander leaves
