Pakodas made with brinjals are a delicious chai-time snack for all!BAINGAN PAKODAIngredients1 large brinjal (baingan)1 tbsp coriander seeds2 tsps cumin seeds1 tsp carom seeds (ajwain)1½ cups gram flour (besan)1-2 green chillies, chopped1 tsp red chilli powder¼ tsp turmeric powder2 tbsps chopped fresh coriander leaves Salt to tasteOil for deep fryingMethod1. Dry roast coriander seeds, cumin seeds and carom seeds till fragrant in a non-stick pan. Take the pan off the heat and allow to cool slightly. Coarsely crush the roasted spices in a mortar with a pestle.2. Take gram flour in a large bowl. Add green chillies, red chilli powder, turmeric powder, coriander leaves, 2 tsps crushed mixture and salt. Add ¼ cup water and mix well. Add ½ cup water and mix till a smooth batter is formed. 3. Cut the brinjal into medium roundels. Transfer this into the batter and mix till all the roundels are well coated. 4. Heat sufficient oil in a kadai. Gently slide in a few brinjal roundels at a time and deep fry till they turn golden, crisp and slightly puff up. Drain on an absorbent paper.5.
