Recipe in English:

Ingredients:
-Aloo (Potatoes) 2 large
-Boiling water as required
-Baisan (Gram flour) 2 Cups
-Himalayan pink salt 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) tsp
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Ajwain (Carom seeds) tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & tsp
-Water 3 Cups
-Hari mirch (Green chilli) chopped 1 tbs
-Pyaz (Onion) chopped Cup
-Hara dhania (Fresh coriander) chopped Cup
-Cooking oil 4 tbs
-Chaat masala

Directions:
-Grate potatoes with the help of the grater & set aside.
-In boiling water,place strainer,add grated potatoes & blanch on medium flame for 3 minutes,strain & set aside.
-In a wok,add gram flour,pink salt,cumin seeds,red chilli powder,turmeric powder,coriander seeds,carom seeds,ginger garlic paste,water & whisk until well combined.
-Turn on the flame,mix continuously & cook on low flame until dough is formed (6-8 minutes).
-Turn off the flame,add green chilli,onion,blanched potatoes,fresh coriander & mix well.
-Turn on the flame & cook on medium flame for 1-2 minutes.
-On greased tray,add prepared mixture & spread evenly with the help of greased spoon.
-Let it cool at room temperature & refrigerate for 10 minutes.
-Cut into squares pieces with the help of cutter.
-In a frying pan,add cooking oil & shallow fry on medium flame from both sides until golden.
-Baisan potato squares can be air fried in preheated air fryer at 180C for 8-10 minutes.
-Sprinkle chaat masala & serve with tomato ketchup!

Ajza:
-Aloo (Potatoes) 2 large
-Boiling water as required
-Baisan (Gram flour) 2 Cups

-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) tsp
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Ajwain (Carom seeds) tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & tsp
-Water 3 Cups
-Hari mirch (Green chilli) chopped 1 tbs
-Pyaz (Onion) chopped Cup
-Hara dhania (Fresh coriander) chopped Cup
-Cooking oil 4 tbs
-Chaat masala

Directions:
-Aloo ko grater ki madad sa grate ker lein & side per rakh dein.
-Boiling water per strainer rakh ker grated aloo dal dein aur darmiyani ancch per 3 minutes kliya blanch ker lein phir strain ker ka side per rakh dein.
-Karahi mein baisan,pink salt,zeera,lal mirch powder,haldi powder,sabut dhania,ajwain,adrak lehsan paste aur pani dal ker ache tarhan whisk ker lein.
-Chulha on karein aur musalsal mix kertay hoye halki ancch per dough form ho janay tak paka lein (6-8 minutes).
-Chulha bund ker dein,hari mirch,pyaz,blanched aloo aur hara dhania dal ker ache tarhan mix ker lein.
-Chulha on karein aur darmiyani ancch per 1-2 minutes kliya paka lein.
-Greased tray per tayyar mixture dal dein aur greased spoon ki madad sa pheela lein.
-Room temperature per thanda ker lein aur 10 minutes kliya refrigerate mein rakh dein.
-Cutter ki madad sa squares pieces mein cut ker lein.
-Frying pan mein cooking oil dal dein aur darmiyani ancch per dono sides sa golden ho janay tak shallow fry ker lein.
-Baisan potato squares ko 180C mein preheated air fryer mein 8-10 minutes kliya air fry ker lein.
-Chaat masala sprinkle karein aur tomato ketchup ka saath serve karein!
