Grilled chicken slices spread over a bed of tomato sauce topped with grated mozzarella cheese and baked.BAKED MOZZARELLA CHICKENIngredients2 boneless chicken breasts2 medium tomatoes, chopped ½ cup fresh buffalo mozzarellaFew fresh basil leaves3-4 garlic cloves, chopped1 teaspoon red chilli flakes½ cup grated processed cheese½ cup fresh tomato puree1 cup white sauce1 teaspoon dried mixed herbs2 tablespoons oilSalt to tasteParsley sprigs for garnishMethod1. Slice the chicken horizontally into two thin slices. Marinate with salt, chilli flakes, half the garlic and few drops of the oil.2. Rub the marinade well onto the chicken and set aside for 10-15 minutes.3. Meanwhile, heat one tablespoon oil a nonstick pan for the tomato sauce. Add the remaining garlic and sauté for a minute or till it turns light brown in colour. 4. Add the tomato, tomato puree and salt. Mix well and cook until the sauce thickens.5. Add the tomato ketchup. Tear a few basil leaves into the sauce and remove from heat.6. Heat the remaining oil in a nonstick grill pan for the chicken. Cook the chicken for a minute on each side till it is half cooked. Drain on an absorbent paper. 7. Slice the chicken and set aside.8. In a baking dish, spread a layer of the tomato sauce at the bottom, then arrange the chicken slices and then crumble the mozzarella cheese.9. Then spread the white sauce and sprinkle the grated cheese evenly.10. Bake in a preheated oven to 180° C for 15-20 minutes or till the top is light brown in colour.11.
