Baked Onion Rings | Sanjeev Kapoor Khazana

Healthy version of onion rings. This one is coated with quinoa and baked till crisp.

BAKED ONION RINGS - (Serves - 4)

Ingredients

2 large onions, cut into thick roundels, layers separated and soaked
¾ cup quinoa
¾ cup refined flour
1 teaspoon paprika
1 teaspoon mixed fresh herbs
1 teaspoon mustard paste
1 teaspoon onion powder
1 teaspoon garlic powder
Crushed black peppercorns to taste
Salt to taste
¼ cup fresh breadcrumbs

Method

1. Preheat oven to 180º C.
2. Dry roast quinoa in a non-stick pan till golden and crisp.
3. Combine flour, paprika, mixed herbs, mustard paste, onion powder, garlic powder, crushed peppercorns and salt in a bowl. Add some water and whisk well to make a semi-thick batter.
4. Coarsely grind the roasted quinoa and transfer on a plate. Add breadcrumbs and salt and mix well.
5. Pat dry soaked onion rings in an absorbent paper.
6. Dip each onion ring in batter, coat with quinoa mixture and transfer on a baking tray.
7. Put the baking tray in preheated oven and bake for 20-25 minutes.
8. Serve hot.
