Healthy version of onion rings. This one is coated with quinoa and baked till crisp.BAKED ONION RINGS - (Serves - 4)Ingredients2 large onions, cut into thick roundels, layers separated and soaked¾ cup quinoa ¾ cup refined flour1 teaspoon paprika1 teaspoon mixed fresh herbs1 teaspoon mustard paste1 teaspoon onion powder1 teaspoon garlic powderCrushed black peppercorns to tasteSalt to taste¼ cup fresh breadcrumbsMethod1. Preheat oven to 180º C.2. Dry roast quinoa in a non-stick pan till golden and crisp. 3. Combine flour, paprika, mixed herbs, mustard paste, onion powder, garlic powder, crushed peppercorns and salt in a bowl. Add some water and whisk well to make a semi-thick batter. 4. Coarsely grind the roasted quinoa and transfer on a plate. Add breadcrumbs and salt and mix well.5. Pat dry soaked onion rings in an absorbent paper. 6. Dip each onion ring in batter, coat with quinoa mixture and transfer on a baking tray. 7. Put the baking tray in preheated oven and bake for 20-25 minutes.8.
