Baked Orzo & Mussels Delicious Lenten Recipe Ken Panagopoulos

Here's a very easy and super delicious one-pot baked orzo & mussels recipe that is also perfect for lent. Try it today, love it forever...

Ingredients List:

- Fresh mussels
- 1 onion
- 1/4 cup Greek extra virgin olive oil
- 2 garlic cloves
- 1 tsp. cinnamon
- 1/2 tsp. cumin
- 1 clove
- 2 cups orzo
- 1-1/2 cups crushed tomatoes
- 8 cups water
- Salt & pepper to taste

Method:

1. Pre-heat oven to 400*f/200*c
2. In a large pot, brown chopped onion and garlic in the olive oil
3. Saute onion and garlic for 6 minutes and then add the cinnamon, cumin & clove and continue cooking for another 3 minutes
4. Add orzo and heat orzo for about 3 minutes
5. Add crushed tomatoes and water and bring to a boil
6. Once boiling, bake in oven for 30 minutes uncovered
7. Once orzo has absorbed most of the liquid, add the mussels vertically about 1-1/2" apart
8. Bake for another 10 minutes or until all the mussels have opened
