Here's a very easy and super delicious one-pot baked orzo & mussels recipe that is also perfect for lent. Try it today, love it forever...Ingredients List:- Fresh mussels- 1 onion- 1/4 cup Greek extra virgin olive oil- 2 garlic cloves- 1 tsp. cinnamon- 1/2 tsp. cumin- 1 clove- 2 cups orzo- 1-1/2 cups crushed tomatoes- 8 cups water- Salt & pepper to tasteMethod:1. Pre-heat oven to 400*f/200*c2. In a large pot, brown chopped onion and garlic in the olive oil3. Saute onion and garlic for 6 minutes and then add the cinnamon, cumin & clove and continue cooking for another 3 minutes4. Add orzo and heat orzo for about 3 minutes5. Add crushed tomatoes and water and bring to a boil6. Once boiling, bake in oven for 30 minutes uncovered7. Once orzo has absorbed most of the liquid, add the mussels vertically about 1-1/2" apart8.
