Healthy and delicious rice made using Indian spinach and mild spices.BAKED PALAK PANEER RICEIngredients For palak layer1 cup spinach puree 1 cup cooked basmati rice2 tbsps oil1 medium onion, choppedSalt to tasteA pinch of garam masala powderFor paneer layer300 gms cottage cheese (paneer), crumbled1 cup cooked basmati rice2 tbsps oil2 tbsps tomato basil pasta sauceSalt to tasteA pinch of roasted dried fenugreek leaves (kasoori methi)Crackling spinach45 spinach leaves, cut into thin stripsOil for deep frying1 tbsp sesame (til) oil 1 tsp red chilli flakesSalt to taste1 tbsp sugar1 tbsp toasted sesame seeds (til)Method1. Heat 2 tbsps oil in a non stick wok and 2 tbsps oil in a non stick pan.2. Add cumin seeds to the wok and when they begin to change colour, add garlic and saute for ½ minute. Add onion and saute.3. Add crumbled cottage cheese to the pan and saute. Add tomato basil pasta sauce and mix well.4. Add spinach puree to the wok and mix.5. Preheat an oven to 180°C.6. Heat all the rice in the microwave. 7. Add salt and garam masala powder to the spinach mixture and mix well. Add salt and dried fenugreek leaves to the cottage cheese mixture and mix well.8. Add half the rice to the spinach mixture and half to the cottage cheese mixture and mix well.9. Adjust salt in both the wok and the pan and cook for a minute.10. Grease a round steel mould over an oven proof plate. Put some of the spinach rice and press well. Over this put a layer of cottage cheese rice and press. Bake in the preheated oven for 10 minutes. You can serve it without baking too.11. Top with a little crackling spinach and serve hot.12. To make crackling spinach deep fry spinach strips till crisp. Drain on absorbent paper. Heat sesame oil in a non stick pan, add red chilli flakes and immediately add the fried spinach.
