Grated vegetables mixed with gram flour and grated coconut, baked till perfection.BAKED VEGGIE BITESIngredients1 medium carrot, peeled and grated½ small cabbage, gratedOil for greasing and as required ½ cup gram flour¼ cup fresh scraped coconut1 teaspoon red chilli powder1 teaspoon cumin-coriander powder1 inch ginger, grated2 tablespoons chopped fresh coriander leavesSalt to taste1 teaspoon baking sodaWhite sesame seeds for sprinklingMethod1. Preheat oven at 180ºC. Grease a glass baking dish with some oil. 2. Combine gram flour, coconut, carrot, cabbage, chilli powder, cumin-coriander powder, ginger, chopped coriander, salt and ½ cup water in a bowl and whisk well.3. Add baking soda and mix. Add some oil and mix well.4. Pour the mixture in greased dish and sprinkle some sesame seeds. Put the dish on a baking tray. Place the baking tray in preheated oven and bake for 25 minutes.5.
