Balsamic Glazed Mushrooms Mushroom Recipes Sanjeev Kapoor Khazana

Marvellously easy, these mushrooms with a deep golden brown colour and sweet-tart flavours is an easy-peasy recipe. Another great side to your favourite Oriental main course.

BALSAMIC GLAZED MUSHROOMS

Ingredients

cup balsamic vinegar
35-40 button mushrooms
2 tbsps sugar
2 tbsps oil
2 tbsps finely chopped garlic
1 medium onion, finely chopped
Salt to taste
1 tsp red chilli flakes
cup frozen blanched edamame, thawed
2 tbsps corn flour slurry
2 tbsps chopped spring onion greens
Fried rice to serve

Method

1. Caramalise sugar in a shallow pan. Add balsamic vinegar and mix well. Cook for 6-8 minutes or till the mixture thickens.
2. Heat oil in another shallow pan. Add garlic and onion and saut till translucent. Add mushrooms, salt, dried red chilli flakes and mix. Cook on high heat for 3-4 minutes.
3. Add the reduced balsamic reduction and mix well. Cook for 1-2 minutes.
4. Add edamame and corn flour slurry and mix well. Cook for 1-2 minutes.
5. Add spring onion greens, mix and serve hot with fried rice.
