बारबेक्यू प्रॉन्स | Barbeque Prawns | Sanjeev Kapoor Khazana

Prawns marinated in tasty, flavourful spices and cooked to perfection is a treat!

BARBEQUE PRAWNS

Ingredients

20-25 medium prawns, cleaned and deveined
10-12 garlic cloves
Salt to taste
10-12 fresh parsley sprigs
2-3 fresh thyme sprigs
1-2 fresh oregano sprigs
½ lemon
1 tsp red chilli flakes
Crushed black peppercorns to taste
2 tbsps olive oil + for brushing
2 tbsps orange juice
Butter for basting
Salad to serve

Method

1. Coarsely pound the garlic cloves and salt in a mortar with a help of a pestle.
2. Tear the parsley sprigs and add into the garlic mixture. Pluck the thyme leaves and pluck the oregano sprigs into the same mixture. Squeeze the juice of lemon and add red chlli flakes along with salt, crushed black peppercorns and continue to pound to a coarse mixture.
3. Add olive oil and mix well.
4. Take prawns in a large bowl. Add salt, orange juice and mix well. Add the pounded mixture and mix till each prawn is well coated with the mixture. Set aside to marinate for 15-20 minutes.
5. Skewer the prawns on to a metal skewer.
6. Brush some olive oil in an electric barbeque. Place the skewers on it and cook on high heat for 2-3 minutes on each side. Brush with butter in between.
7. Arrange the skewers on a serving plate. Serve hot with salad.
