BARLEY SALADIngredients2 cups barley (jau), boiled1 tbsp honey1 tbsp lemon juiceCrushed black peppercorns to tasteSalt to taste½ tsp red chilli flakes1 fresh rosemary sprig2-3 fresh thyme sprigs1-2 fresh oregano sprigs2 tbsps olive oil½ medium English cucumber½ medium red capsicum, chopped½ medium yellow capsicum, chopped½ medium green capsicum, chopped3 tbsps chopped spring onion greens2 tbsps boiled sweet corn kernelsPickled onion rings for garnish8-10 almonds, roasted and roughly choppedMethod:1. To make the dressing, take honey in a jar, add lemon juice, crushed black peppercorns, salt, and red chilli flakes. 2. Finely chop the rosemary, thyme, oregano and add into the jar. Add olive, close the jar with a lid and shake till well combined.3. Roughly chop the English cucumber and transfer in a bowl. Add red capsicum, yellow capsicum, green capsicum, spring onion greens, sweet corn kernels, boiled barley and drizzle the dressing over it and mix well.4. Transfer on a serving plate, garnish with some pickled onions, and sprinkle roasted almonds. Serve.
